Carrot Cake With Cheese Frosting



How to make Carrot Cake

The Ingredients


~ Brown Sugar 200 gm
~ Fine Sugar 200 gm
~ Salt 7 gm
~ Egg 280 gm
~ Plain Flour 280 gm
~ Bread Flour 70 gm
~ Baking Powder 7 gm
~ Soda Bicarbonate 3 gm
~ Cinnamon Powder 3 gm
~ Vanilla 4 gm
~ Nibbed Almond 50 gm
~ Carrot-Fine Shredded 350 gm
~ Chop Pineapple 140 gm
~ Raisins 70 gm
~ Corn Oil 210 gm

Method

1. Cream brown sugar, sugar and salt with eggs on 3rd speed for 1 min.
2. Continue mixing on 2nd speed for 3 to 4 mins.
3. Fold in all the dry ingredients, flour, baking powder, soda, cinnamon, vanilla
and nibbed almond into mixture on 1st speed gradually.
4. Fold in finely shredded carrot, pineapple adn raisins on 1st speed for 10 secs.
5. Blend in the oil on 1st speed for 10 secs until even;y mixed.
6. Transfer into three 6" tins and bake on a tray of water for 35 to 40 mins at 180C
7. After baking apply cream cheese or apricot glaze.

Cream Cheese
~ 1 Philadelphia cream cheese (250 gm) + 60 gm butter + 2 tablespoon of fine sugar
~ Continue mixing until soft and fine.
